Pesto Quinoa Salad

Ingredients
  

  • 1 cup uncooked quinoa
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup grape tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/4 cup jarred pesto
  • 1/4 cup shaved parmesan

Instructions
 

  • Cook quinoa according to package directions.
  • Dice all vegetables. Once quinoa has cooled slightly, mix together quinoa and vegetables. Add pesto and mix again.
  • Place in refrigerator to chill for approximately 30 minutes. Top with shaved parmesan before serving.
