Pumpkin Spice Baked Oatmeal

Ingredients
  

  • 3 cups old fashioned rolled oats
  • 1/4 cup brown sugar
  • 1 1/2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1/4 cup dried cranberries
  • 2 eggs
  • 2 cups milk of choice
  • 1 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tbsp olive oil
  • 3/4 cup finely chopped pecans (optional)

Instructions
 

  • Preheat oven to 350 degrees F. Prepare a 9x13" baking dish with either non-stick spray or parchment to prevent sticking.
  • Mix dry ingredients together first and then mix wet ingredients together. Combine dry and wet ingredients and mix. Pour batter into prepared baking dish and top with pecans if desired.
  • Bake uncovered for 35 to 40 minutes. Serve hot and enjoy!
