Wash Brussel sprouts under running water. Remove stems from sprouts by cutting off ends.
Using a mandolin or food processor, shred sprouts until they are thinly sliced. (This can also be done by hand, if a mandolin or food processor is not available).
Dice entire apple into bite-sized pieces.
In a large bowl, place sprouts, diced apple, dried cranberries, sunflower seeds, and Parmesan cheese. Toss ingredients together.
To make dressing, mix dressing ingredients together in a small bowl.
Pour prepared dressing over Brussel sprouts. Enjoy!
