Preheat oven to 350 degrees F.
Place a large cast iron skillet (or oven-safeskillet) over medium heat and add a drizzle of olive oil.
Add chicken breast to skillet and season asdesired — brown chicken on each side. The chicken will finish cooking in theoven. In a large bowl, mix together cream of mushroom soup and chicken broth;set aside.
Once the peas and mushrooms have been drained and rinsed, add to the skillet with the chicken and turn off the heat.
Next, pour the cream of mushroom mixture over the chicken and vegetables and gently stir to combine.
Top skillet with lid or aluminum foil and place in oven.
Bake for 30-35 minutes.
Once the chicken is cooked through, serve over brown rice for a complete meal!
