- Preheat oven to 350 degrees F.  
-  Place a large cast iron skillet (or oven-safeskillet) over medium heat and add a drizzle of olive oil.  
- Add chicken breast to skillet and season asdesired — brown chicken on each side. The chicken will finish cooking in theoven. In a large bowl, mix together cream of mushroom soup and chicken broth;set aside.  
- Once the peas and mushrooms have been drained and rinsed, add to the skillet with the chicken and turn off the heat.  
- Next, pour the cream of mushroom mixture over the chicken and vegetables and gently stir to combine.  
- Top skillet with lid or aluminum foil and place in oven.  
- Bake for 30-35 minutes.  
- Once the chicken is cooked through, serve over brown rice for a complete meal!
