Fresh Brussel Sprout Salad
Ingredients
Dressing
- ⅓ cup olive oil
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 clove garlic minced
Salad
- 1 lb fresh Brussel sprouts
- 1 honey crisp apple
- ½ cup dried cranberries
- ½ cup sunflower seeds
- ⅓ cup parmesan cheese
Instructions
- Wash Brussel sprouts under running water. Remove stems from sprouts by cutting off ends.
- Using a mandolin or food processor, shred sprouts until they are thinly sliced. (This can also be done by hand, if a mandolin or food processor is not available).
- Dice entire apple into bite-sized pieces.
- In a large bowl, place sprouts, diced apple, dried cranberries, sunflower seeds, and Parmesan cheese. Toss ingredients together.
- To make dressing, mix dressing ingredients together in a small bowl.
- Pour prepared dressing over Brussel sprouts. Enjoy!
