A Taste of NHBP: Cowboy Caviar

Ingredients
  

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1/2 tbsp balsamic vinegar
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 15 oz can of black beans
  • 1 15 oz can of black-eyed peas
  • 1 bell pepper (any color)
  • 2 Roma tomatoes
  • 1 Jalapeño
  • 1/4 red onion
  • 1/4 bunch fresh cilantro

Instructions
 

  • In a small bowl, whisk together olive oil, limejuice, balsamic vinegar, chili powder, and cumin.
  • Rinse and drain both cans of beans and add to alarge bowl.
  • Finely dice the bell pepper, tomatoes, red onion, cilantro, and jalapeno and add to the beans. For a spicier caviar, mix in the jalapeno seeds; for milder caviar, discard the jalapeno seeds.
  • Lastly, mix all ingredients together and toss with dressing. Enjoy with chips, bell pepper slices, in an omelet, or by the spoonful!
