Zucchini Fries
Ingredients
- 4 medium zucchinis quartered lengthwise
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- ½ cup flour
- 2 eggs beaten
- 1 tsp dried parsley or 2 tsp fresh parsley
- Black pepper to taste
Instructions
- Preheat oven to 425 degrees F. Prepare a baking sheet with non-stick spray.
- In a shallow bowl, combine panko, Parmesan cheese and parsley.
- Line three shallow bowls: one with flour, one with beaten eggs and one with panko mixture.
- Coat zucchini in flour, dip in eggs, and then coat in panko mixture. Place on baking sheet. Repeat this step until all zucchinis are coated.
- Bake in oven for 20 to 25 minutes, or until crisp and golden. Top with more parsley, if desired!

What’s the Deal with GMOs?
GMO stands for genetically modified organism. Another name that food manufacturers and farmers sometimes use when talking about GMO foods is genetically engineered (GE). Food that is considered GMO or GE has undergone some type of change to its DNA structure. The main reason that food manufacturers and farmers use GMO and GE foods is to increase yield, insect resistance, and nutrition content of crops. There are currently only 10 GMO crops that have been approved in the U.S. and are for sale on the market. These crops are: summer squash, soybeans, corn, cotton, papaya, canola, alfalfa, sugar beet, potato, and apples! While some consumers have hesitations about GMOS, the World Health Organization states there is likely no health risk associated with GMOs. Furthermore, there have been over 1,7000 studies done on the safety of GMOs.
