Creamy Vegetable & Chicken Bake

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 can cream of mushroom soup
  • 1 can of peas, drained and rinsed
  • 1 6.5oz can of sliced button mushrooms, drained & rinsed
  • 1/2 can chicken broth
  • Olive oil
  • Brown rice for serving

Instructions
 

  • Preheat oven to 350 degrees F.
  •  Place a large cast iron skillet (or oven-safeskillet) over medium heat and add a drizzle of olive oil.
  • Add chicken breast to skillet and season asdesired — brown chicken on each side. The chicken will finish cooking in theoven. In a large bowl, mix together cream of mushroom soup and chicken broth;set aside.
  • Once the peas and mushrooms have been drained and rinsed, add to the skillet with the chicken and turn off the heat.
  • Next, pour the cream of mushroom mixture over the chicken and vegetables and gently stir to combine.
  • Top skillet with lid or aluminum foil and place in oven.
  • Bake for 30-35 minutes.
  • Once the chicken is cooked through, serve over brown rice for a complete meal!
